1 ripe cantaloupe, cut into bite size pieces
20 mint leaves, cut into julienne strips
¼ cup diced cilantro
¼ teaspoon white pepper
3 tablespoons lime juice
1 tablespoon olive oil
½ cup aged (30 days or more) feta cheese (optional)
- Mix cantaloupe, mint, basil, pepper, lime juice, and olive oil in a medium sized serving dish.
- Top with feta cheese and serve immediately.
